Eggceptional Abundance

Weeks like this, being under the weather and not seeing anyone to give eggs to, and being blessed with about 3 dozen, my basket runneth over. I don't like to waste food so I've done some research on how to preserve them. 

In the old days farmers used to preserve them in salt, bran, oats, and even fine charcoal. But I've decided to take the advice of Kellene Bishop in her Preparedness Pro blog, and use warm mineral oil and store them right in their cartons! She says they will keep up to 9 months!

The post was from 2009 and she hasn't changed it or deleted it, so I think I can trust that it works. I can't wait to get my hands in that warm oil tomorrow morning! The eggs will be beautiful, and it might even be therapeutic!

*Update* - Make sure you still keep them somewhere cool. I put some in a cabinet and they went bad. I'm oiling the rest and keeping in the refrigerator for winter use.
